Stuffed Beef with Crushed Potatoes

Low in fat, easy to make, looks pretty and tastes like something you'll find in a restaurant! My husband wouldn't mind if I put this on the menu again!!

Ingredients: Serves 2

4 One minute beef steaks (not too small)
Half an onion, chopped
125g Mushrooms, chopped
1 Clove garlic, crushed
50g Feta cheese
Sprig fresh thyme, finely chopped
Salt and Black pepper
30ml Olive oil
3 Medium sized potatoes
15ml Butter
15ml Milk/Cream

Method:

Step1: Heat 10ml olive oil in a pan, add the garlic, saute for 1min. Add the onion, saute for 3min. Add the mushrooms and fresh thyme and saute for 5min, until cooked. Remove from the heat and crumble the feta cheese into the onion mix. Season with salt and pepper. Put aside.

Preheat oven to 180 degrees

Step 2: Put the potatoes in a pot covered with water and bring to the boil. Simmer for 10-20 min, until soft. PS: Leave the skin on the potatoes.

While potatoes are simmering: Flatten the steaks with a meat tenderiser (see stuffed chicken recipe, same method). Divide the onion mix into 5 portions, place one portion onto flatten steak and roll. To secure stuffing and preventing it from falling out, use toothpicks, one in the middle and 1 at both ends. Remember to remove before serving! Repeat with the rest of the steaks. Place in baking dish, sprinkle the rest of the olive oil over as well as the rest of the onion mix. Place in oven and cook for 15-20 min.

Step 3: With a fork, crush the potatoes, add the butter and milk/cream and season with salt and pepper.

Serve with Ina Paarman's steak and burger sauce.
